Gut Friendly Taco Tuesday

“How do I boost my gut health without taking a bunch of supplements?”

Sound familiar? It’s a question I frequently get asked.

Here’s 3 quick tips to address that question-> 

  • Fermented foods

Fermented foods have been around for thousands of years and are slowly making a comeback. Kombucha seems to be leading the charge with the fizz stacked in rows in grocery stores, gas stations, and even bars. Believe it or not, kombucha is extremely easy to brew. I’ve been brewing for almost a year and have created flavors ranging from earthly herb to fruity pebbles. 

Tempeh is another fermented food I enjoy because it’s so versatile. Traditional tempeh is fermented soybeans. During the fermentation process acids are processed which control gut compromising pathogens like salmonella. (Hutchins 1995) The fermentation process also decreases the level of phytic acid making it easy to digest and improves the bioavailability of certain minerals, such as zinc and iron.

When it comes to balancing your gut health with fermented foods you should consider starting slow as these types of foods may enhance your symptoms (gas, bloating) until your system is balanced (which takes more than drinking a bottle of kombucha a day).

Tempeh Taco Tuesday Recipe

Recipe curiosity of Summer Bock

4 tablespoons tamari

4 tablespoons molasses

2 tablespoons vinegar

1 tablespoon mustard

Organics Tempeh

Corn tortillas

Thinly sliced cabbage

Cilantro, chopped

Sweet onions, chopped

Fermented sour cream

Spicy sauerkraut or kimchi

Directions:

Combine the tamari, molasses, vinegar, and mustard to create a marinade. Slice tempeh thin, and spread in a baking dish. Pour marinade evenly over tempeh and place in fridge for 1 hour or more.

Preheat oven to 300F. Drain the tempeh and bake in the oven until moisture is gone and tempeh is golden-brown.

Warm tortillas and stack two per taco. Place baked tempeh on tortillas and top with remaining ingredients.
